La Forgia: Finding Our Direction
After years of changes, adaptations and decisions that weren't always easy, the time came to create something new.
That is how La Forgia was born.
Not as a final destination.
But as an attempt to give our work a clearer direction.
In the beginning, however, not everything was fully defined.
We offered both a tasting menu and an à la carte menu.
It was a period of transition.
On one hand, we wanted to create a more carefully defined dining experience.
On the other, we were still searching for the right balance.
There was another factor to consider.
We were operating in a tourist destination.
And building something different takes time.
Time for people to understand what you're offering.
Time for them to discover you.
Time to establish a clear identity, including online.
In the beginning, you need to make yourself known.
And sometimes, that means starting with a more flexible approach.
But over time, one thing became clear.
Trying to do both wasn't really working.
It risked creating confusion.
Diluting our identity.
Making it difficult for people to understand who we were.
That's when we made our decision.
Remove the à la carte menu.
Focus exclusively on the tasting menu.
Not to make things more complicated.
But to simplify them.
To give our restaurant a clear direction.
To create a consistent and meaningful dining experience.
Our decision to welcome adults only also came from that same philosophy.
It's not about imposing restrictions.
It's about preserving the balance, pace and atmosphere of the experience.
After years of having to adapt to everything around us, this was the real turning point.
No longer doing what was necessary.
But doing what truly made sense.
That is La Forgia.
A journey that has finally found its own identity.
