**Leaving Piedmont for Lanzarote: A Decision That Changes Everything**
You reach a point in life when you realise that what you've built is no longer enough.
Not because it isn't working. But because you feel it's no longer where you belong.
Leaving Piedmont wasn't a sudden decision. It was the result of countless thoughts, doubts, fears… and an increasingly strong desire for change.
A change of pace.A change of perspective.A change of life.
When we arrived in Lanzarote, nothing was easy.
I didn't know the local ingredients.I didn't know the island. And above all, I didn't really understand what it meant to work on an island.
But one thing was clear to me:I didn't want to recreate what I had been doing in Italy.
I wanted to build something new.
Something that made sense here, in this place.
In the beginning, everything was more difficult than I had expected.Habits change. The pace of life changes. Even the way you cook changes.
And alongside all of this, there was my personal life.A six-year-old son, a new environment, and a whole new everyday life to rebuild.
It wasn't just about moving to another place. It was a complete shift in the balance of our lives.
Over time, I realised it wasn't simply about learning to work with new ingredients. It was about changing my way of thinking.
And that was the real challenge.
