When Your Surroundings Change, You Have to Change Too

When we were still in Arrieta, running our small pizzeria, Covid arrived.

In a very short time, everything changed.

Not only because of the impact on our work, but also because of a series of bureaucratic problems that added to an already difficult situation.

Moving to the new, larger restaurant was supposed to be a natural step forward: a pizzeria and restaurant with more space, better facilities and more opportunities.

But reality forced us to start differently.

With the restrictions in place, we couldn't operate the dining room as we had imagined.

What did work, however, was pizza.

Delivery.

Takeaway.

Food to go.

So, in the beginning, we had to focus on what was actually possible.

It wasn't the complete project we had envisioned, but it was what allowed us to keep going.

Pizza kept our business alive during a very difficult time.

And it was precisely then that we understood something important: a restaurant cannot survive on the idea you have in your head alone. It has to respond to the reality around it.

Over time, however, our desire to move beyond that model began to grow.

We didn't want to remain tied to a way of working that had been born out of necessity.

We gradually began focusing more and more on restaurant dining, local ingredients and the identity of the island.

It wasn't a sudden transformation.

It was a journey.

A change that began during a difficult period, but eventually led us towards a clearer direction.
